Gula Melaka is also known as Palm Sugar. and is made primarily from the saps of coconut palms. It is a natural or unrefined sugar made from the nectar the flowers of various types of palm trees. The sugar is extracted from the saps of the flowers and then caramelized by boiling at low temperature. The caramelized sap is sold as palm syrup in bottles or solidified and sold in the form of bricks or cakes. Pure Gula Melaka generally has a smokey flavour and smell and is used in both sweet and savoury dishes. You can use Gula Melaka as sugar substitute too.
